This is a really simple, easy meal to make. All you need is grilled salmon, some pesto, and a bit of rice. The pesto we made with pine-nuts, basil, garlic and olive oil. Left out the Parmesan only because the salmon is such a rich, fatty fish. We used black rice as a side and mixed in some spinach to give it a little bit of veggies. A yummy, simple dish that shouldn’t take more than 30 minutes to make.
